Born and trained in Nantes, France, Pascal honed his culinary expertise across the country before expanding his horizons in Canada. He refined his craft at the prestigious 5-Diamond "Auberge Hatley" before moving to the UK, where he embraced new opportunities in Brighton’s top kitchens.

Driven by passion, Pascal launched Pascal Brasserie in Hove, followed by the acclaimed Le Nantais Bistro, and now brings his culinary vision to life with Brook.
